As a kid I wasn’t much of a salad eater (who is?). Still, I was obsessed with honey mustard and conceded to eating a plate of green only when it was smothered in honey mustard dressing. I decided to try to make a honey-less dressing with all of the flavor and gooey goodness I remembered from my beloved childhood condiment. I added a bit of minced ginger to give the dressing a kick and it was absolutely delicious! I give it an A+ mixed with a light, refreshing lunchtime salad. I liked this combination of fruit and veg- just the right amount of sweet, savory, and crunch, packed with iron & vitamins C, K, and A.
5 cups spinach + 1/2 cup chopped strawberries + 1/2 cup chopped yellow bell pepper
Mix the vinaigrette ingredients and pour over your salad of choice!
